Tasting Note

Concentrated citrus and white peach with yuzu, wet pebble minerality and saline chalkiness. Creamy texture, bright acidity and a long, chalky finish with herbal/fennel notes.


Food Pairing

Western: lobster, scallops, roast chicken with cream sauce, goat cheese tart; Asian: miso-glazed cod, steamed fish with ginger and scallion, sushi/sashimi, Vietnamese spring rolls.


Production Method

Hand-harvested, whole-bunch pressing, fermented and aged in French oak (portion in new barrels), aged on fine lees with limited bâtonnage; bottled after élevage.
