Deep garnet with intense blackcurrant, blackberry, violet and mineral notes; refined, ripe tannins, fresh acidity and a long, mineral finish with spice and cedar nuances.

Western: roast lamb, ribeye, beef Wellington, aged hard cheeses; Asian: Peking duck, char siu, Korean BBQ short ribs, braised shiitake and soy-braised beef.


Production Method

Hand-harvested; small-lot fermentations (≈82 vats), gentle extraction; aged 18 months in French oak (≈60% new, 40% one-year-old).
