Nectarine, white peach and grapefruit with struck-match, almond-meal and lanolin notes; flinty minerality and toasted French-oak spice, creamy texture, bright acidity and a long stony finish.

Roast chicken, lobster with beurre blanc, creamy pasta, pork belly; Asian: miso-glazed salmon, tempura prawns, Cantonese roast duck, richer sushi (e.g. toro).
Production Method
Hand-harvested Chardonnay; primary fermentation in French oak and large 1600L seasoned oak casks (≈20% new oak); no malolactic fermentation; ~11 months barrel ageing; bottled mainly under screwcap.
