Tasting Note
Pronounced red and black fruits (blackberry, plum), baking spice, dark chocolate and fertile loam; medium-bodied with firm, grainy tannins, lively acidity and a very long, elegant finish.

Western: grilled lamb, rib‑eye steak, braised beef short ribs, aged cheddar. Asian: Korean BBQ, char siu, Sichuan pepper beef, miso‑glazed aubergine, teriyaki beef skewers.
Production Method
Exclusively estate fruit; hand-harvested, destemmed to small open fermenters, short cold soak, ~7-day fermentation, pressed to large-format French oak and aged ~18 months before bottling.
