Tasting Note
Dense, full-bodied Pauillac with blackcurrant and blackberry, violet and cedar aromas, layers of tobacco, coffee and exotic spice; ripe, velvety tannins and a very long, mineral finish.
Food Pairing
Western: roast ribeye, lamb chops, beef bourguignon, aged hard cheeses. Asian: Peking duck, char siu (roast pork), Korean BBQ (beef), braised beef with soy-ginger, spicy lamb curry.
Production Method
Hand-harvested, plot-by-plot vinification; fermentation in oak and stainless vats, malolactic fermentation, aged ~18–20 months in new French oak barrels.
