Tasting Note
Dense, deep colour with aromas of blackcurrant, mulberry, cigar box, mocha, spice and leather. Full-bodied and opulent with a satiny mid-palate, velvety tannins, hints of licorice, dark chocolate and caramel, fresh acidity and a very long, savory finish.
Food Pairing
Western: roast lamb, ribeye, beef Wellington, braised short ribs, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (galbi), rich Sichuan beef, braised beef noodle dishes.
Production Method
Traditional Bordeaux vinification: fermented in oak vats (typically 15–25 days) then aged in French oak barriques for c.19–22 months (percentage of new oak varies by vintage).
