Tasting Note

Dense, near-black colour with aromas of blackcurrant, crushed blackberry, cigar box, graphite and spice. Full-bodied, with mature fine tannins, dark chocolate and vanilla notes, pronounced mineral freshness and a long, focused finish.


Food Pairing

Western: roast or grilled beef, lamb, game, beef Wellington, aged cheeses. Asian: Peking duck, Cantonese roasted meats/char siu, rich miso-glazed dishes, Korean BBQ.


Production Method

Hand-harvested; traditional fermentation in wooden vats with extended maceration; aged approximately 18–22 months in French oak barrels (high proportion of new oak) before bottling.
