Tasting Note
Mature, tertiary red with leather, dried cherries, spice, light barnyard and bright acidity. Silky texture with layered notes of pomegranate, licorice and tobacco; long, peppery finish.

Western: roasted lamb, braised beef, venison, duck confit, aged cheeses (Cheddar, Manchego). Asian: Peking duck, Korean BBQ (bulgogi), miso-glazed eggplant, rich ramen or beef noodle soup, lamb kebabs, Lebanese mezze.
Production Method
Fermented with indigenous yeasts in concrete; aged ~12 months in mainly old Nevers oak; bottled unfined and unfiltered with minimal sulfur. Non-interventionist approach.
