Tasting Note
Concentrated Pinot Noir: red and black cherry, currant and violet with smoky/graphite, earth and tobacco notes. Fine, satiny tannins, bright acidity and a long, mineral-driven finish.

Food Pairing
Western: roast duck, beef bourguignon, lamb, mushroom risotto, aged cheeses. Asian: Peking duck, char siu (Cantonese BBQ pork), miso-glazed salmon, grilled shiitake, Korean barbecue.

Production Method
Hand-harvested fruit; variable partial whole-cluster fermentation; aged ~14–16 months in French oak barrels (notable new-oak influence); usually bottled unfined and unfiltered.
