Tasting Note
Raspberry and red‑cherry fruit with floral (violet) and subtle black‑fruit notes, spicy/earthy undercurrents, chalky minerality and refined, slightly rustic tannins. Energetic, focused and medium‑bodied with a long, palate‑cleansing finish.

Western: roast duck, lamb, mushroom risotto, coq au vin, charcuterie and aged cheeses. Asian: Peking duck, miso‑glazed salmon/black cod, Korean bulgogi, soy‑braised short ribs, shiitake‑based dishes.

Hand-harvested Pinot Noir; high proportion whole‑cluster fermentation, gentle extraction (light pigeages/pump‑overs), élevage in French oak (significant new oak for 1er/Grand Cru) until bottling.
