Tasting Note
Profuse blackberry, cassis and black cherry with violet, white pepper and rose-petal notes; orange zest, licice and dark chocolate on a soft, creamy palate with round tannins, bright freshness and a long, persistent finish.

Food Pairing
Western: grilled/wagyu ribeye, roast lamb, braised short ribs, truffle tagliatelle, aged hard cheeses. Asian: Peking duck, Cantonese char siu, Korean BBQ (galbi), Chinese red-braised beef, miso-marinated beef skewers.

Production Method
Hand-harvested, small-lot fermentations; ~18 days skin contact; aged ~17 months in new French oak barrels (French cooperages) before bottling.
