Tasting Note
Concentrated black plum, cassis and blueberry with dried rose petal and violet aromatics. Creamy, satiny texture, fine-grained tannins, notes of espresso, cocoa and dark chocolate bitterness; bright freshness and a long, mineral finish.

Western: grilled ribeye, roast lamb, venison, aged cheddar, truffle‑tagliatelle. Asian: Peking duck, Korean BBQ short ribs (galbi), Cantonese roast pork (char siu), Sichuan pepper beef or rich miso‑glazed dishes.

Production Method
Bordeaux‑style blend; ~22 days skin contact, fermented (largely with ambient/native yeasts), then aged 19 months in 100% new French oak before bottling.
