Tasting Note
Concentrated cassis, blackberry and mulberry with floral violets, graphite and cedar. Silky tannins, bright acidity and dark chocolate notes lead to a long, polished finish with savory, mineral undertones.

Western: grilled ribeye, roast lamb, mushroom risotto, aged cheddar. Asian: Peking duck, Korean BBQ (bulgogi), char siu, Szechuan pepper beef.

Production Method
Estate fruit fermented (2019 used native yeasts), matured ~19 months in 100% new French oak; Bordeaux-style blending and cellaring for extended aging.
