Tasting Note

Blackberry and cassis layered with rose petal, espresso and dark chocolate; velvety, fine-grain tannins, subtle minerality, vibrant acidity and a long, elegant finish.


Food Pairing

Western: grilled ribeye, roast lamb, beef Wellington, truffle risotto. Asian: Peking duck, Korean BBQ (galbi), Sichuan-style beef, braised short ribs (Korean galbi jjim).


Production Method

Hand-harvested estate fruit; ~19 days skin contact, fermented (gravity-assisted) and aged ~18 months in new French oak, followed by extended bottle aging before release.
