Tasting Note
Layered blackcurrant, blackberry and dark cherry with graphite, tobacco, cedar and forest-floor notes. Silky, satiny tannins, menthol/mineral accents and crème de cassis carry to a long, polished finish.
Food Pairing
Western: grilled ribeye, roast lamb, beef Wellington, mushroom risotto. Asian: Peking duck, Korean BBQ (bulgogi/grilled short rib), char siu, soy-braised short ribs.
Production Method
Component lots fermented separately (≈18 days maceration), then blended and aged ~18 months in French oak (predominantly new).
