Tasting Note
Ripe cassis, boysenberry and blackberry with cedar, thyme and chaparral. Savory layers of black pepper, licorice and star anise; long, soft tannins and a persistent dark-fruit finish.

Food Pairing
Western: grilled ribeye, braised short ribs, roast lamb, aged cheddar. Asian: Korean BBQ (bulgogi), Cantonese roast duck/char siu, Sichuan pepper beef, hoisin-glazed pork.

Production Method
Fermented from Napa Valley Cabernet parcels and matured 12 months in French oak (31% new). Bottled as a Napa Valley Cabernet program.
