Tasting Note
Dense ruby with black cherry, cassis, graphite, cedar, tobacco and vanilla. Fresh saline minerality, menthol/herbal edges, dense but elegant tannins and a long savory, chocolate-tinged finish.

Food Pairing
Western: grilled Florentine steak, roasted lamb, braised short ribs, mushroom risotto. Asian: Peking duck, char siu, Korean BBQ (galbi), spicy Sichuan beef.

Production Method
Varieties vinified separately (stainless steel and cement), malolactic in oak; matured ~18 months in French barriques (c.70% new), then blended and returned to oak; minimum 12 months bottle aging before release.
