Tasting Note
Golden, honeyed aromas of apricot, pineapple, candied citrus and honeysuckle with subtle botrytis. Concentrated stone-fruit, marmalade and toasted-almond flavors framed by bright mineral acidity; rich yet precise, very long honeyed finish.
Food Pairing
Western: foie gras, blue cheese (Roquefort), roast poultry with cream sauce, fruit tarts, tarte tatin. Asian: spicy Thai curries, Sichuan dishes, Peking duck, richer sushi, Cantonese dim sum with sweet-savory sauces.
Production Method
Hand-harvested late-harvest (Vendange Tardive) fruit with selective picking of overripe/botrytized grapes, gentle pressing, cool fermentation on indigenous yeasts and aging in neutral vessels; minimal intervention (pre-biodynamic conversion).
Vineyard Info
Domaine Ostertag (Epfig) founded 1966; André Ostertag developed the domaine into a top Alsace producer. Known for many small plots, low yields and terroir-driven wines; converted to organic/biodynamic practices in the late 1990s.
