Tasting Note
Dense black-cherry and blackberry fruit with violets, tobacco, balsamic herbs, cocoa and mineral notes. Voluminous, structured palate, fine-grained tannins, bright orange-peel acidity and a long, fragrant finish.

Food Pairing
Roast lamb, grilled beef, aged Manchego and charcuterie; Korean BBQ (galbi), Peking duck, char siu, mushroom ramen or other umami-rich Asian dishes.

Production Method
Hand-harvested single-vineyard Tempranillo; cold pre-fermentation maceration, fermented in small oak vats, malolactic in new French oak and aged 15–18 months in new French (Bordelaise) oak barrels.
