Tasting Note
Dense black- and blue-fruit core of blackberry, cassis and black cherry with graphite, tobacco, cedar, lavender and dark cocoa. Youthful, mouth-coating texture with fine-grained dusty tannins and a long, saline-tinged finish.

Grilled ribeye, roast leg of lamb, beef short ribs (Korean galbi), aged cheddar or Manchego, mushroom risotto; Asian pairings: Cantonese roast duck or Peking duck, Sichuan beef (milder heat), Chinese red-braised beef, Korean bulgogi.

Production Method
Hand-harvested (often night-picked), sorted, native-yeast fermentation, ~29–31 days maceration with pump-overs/délestage, spontaneous malolactic, aged ~18 months in French oak (≈86% new), bottled unfined/unfiltered.

Paul Hobbs Winery (est. 1991) sources fruit from elite Napa sites. Dr. Crane (planted 1858) is farmed by Andy Beckstoffer; Paul Hobbs produces single-vineyard Cabernet to showcase St. Helena terroir.
