Tasting Note
Concentrated black and blue fruit—blackcurrant, blackberry, blueberry—lifted floral and graphite notes, cedar, licorice and crushed stone. Dense, fine-grained tannins, pencil-shaving oak and a vibrant mineral spine; long, layered, savory finish.

Western: grilled ribeye, roast lamb, braised short ribs, aged cheddar. Asian: Korean BBQ (galbi), Chinese red-braised beef, Peking duck, miso-glazed or soy-braised dishes.

Production Method
Estate fruit; hand-harvested and sorted; small-batch fermentations with cold soak and extended maceration; spontaneous malolactic fermentation in barrel; aged ~20 months in French oak (high % new); bottled unfiltered.
