Tasting Note

Dense cassis, blackcurrant and blueberry with dark chocolate, graphite, tobacco and crushed-rock minerality. Sage/menthol and lavender notes; firm, grainy tannins and bright freshness lead to a long, savory finish.


Food Pairing

Western: grilled ribeye, roasted rack of lamb, braised short ribs, aged cheddar. Asian: Peking duck, Korean BBQ (bulgogi/galbi), Cantonese roast pork, shiitake-dashi braised dishes.


Production Method

Small-lot fermentation with extended maceration; matured ~22 months in new French oak barrels (predominantly French), bottled after careful blending.
