Tasting Note

Deep blackberry and cassis with graphite, eucalyptus, tobacco leaf and violet notes. Full-bodied, concentrated and layered with ripe, polished tannins, firm acidity and a long, dusty, mineral finish.


Food Pairing

Western: grilled ribeye, roast lamb, braised short ribs, aged cheddar. Asian: Korean BBQ (galbi/bulgogi), Cantonese roast duck, Chinese red-braised beef, spicy Sichuan beef.


Production Method

Hand-harvested at night; 5-day cold soak then ~28–30 day maceration; indigenous yeast fermentation; spontaneous malolactic in barrel; aged in new and neutral French oak; bottled unfined and unfiltered.
