Creamy, full-bodied chardonnay: Bosc pear, quince, brioche, Meyer lemon, yellow apple, banana-cream and baking spice with vibrant minerality and a long, layered, savory finish.
Food Pairing
Western: roasted chicken with herbs, lobster or scallops in beurre blanc, creamy pasta, brioche-based dishes. Asian: miso-glazed black cod, seared scallops with soy-butter, tempura, mild coconut curries (not overly spicy).
Production Method
Whole-cluster pressed, barrel-fermented (French oak), spontaneous malolactic in barrel; sur-lie aging with biweekly bâtonnage; bottled unfined and unfiltered after ~15 months.
