Tasting Note

Rich, creamy Chardonnay with pear, baked apple, brioche and crème caramel notes, bright tangerine-citrus lift and mineral salinity; lush texture with focused acidity and long, savory finish.

Western: lobster with butter sauce, creamy mushroom risotto, roast chicken, aged triple-cream cheeses. Asian: soy-butter cod, sushi (rich white-fish), miso-glazed salmon, mildly spiced Thai coconut curries.

Production Method

Whole-cluster pressing, barrel fermentation and aging in French oak (approx. 14 months; portion new oak for structure), minimal intervention to highlight site character.

Sourced from the Richard Dinner Vineyard (Sonoma Mountain), farmed by Paul Hobbs since 1991; planted to old Wente clones on volcanic/clay loam soils, known for concentrated, mineral-driven Chardonnays.
