Tasting Note
Ripe tropical and stone fruit (pineapple, guava, fig) with crème brûlée, pie crust, ginger and a chalky minerality. Medium–full, creamy texture balanced by bright acidity and a long, mineral-driven finish.
Food Pairing
Western: roast chicken, butter-poached lobster, crab cakes, creamy pasta with mushrooms. Asian: miso-glazed black cod, tempura, Thai coconut curry, grilled miso salmon, richer sushi (toro).
Production Method
Whole-cluster pressed, barrel-fermented in French oak; partial malolactic fermentation, sur-lie aging with periodic bâtonnage; aged 12–15 months in a mix of new and used barrels.
