Tasting Note
Bright red-berry core (raspberry, cherry, pomegranate) with violets, dried orange peel, rose petal and black tea; savory herbs, fine talc-like tannins, energetic acidity and a long spiced finish.

Food Pairing
Western: roasted duck, mushroom risotto, pork tenderloin, grilled salmon; Asian: Peking duck, soy-glazed pork belly, miso ramen, teriyaki salmon, shiitake stir-fry.

Production Method
Hand-harvested; fermented in small open-top tanks with indigenous yeasts, short cold soak and spontaneous malolactic; barrel selection aged ~15–16 months in French oak; bottled unfined/unfiltered.
