Tasting Note

Fresh, elegant nose of citrus, white flowers and pear. Supple, generous palate with stone fruit, lime and grapefruit pith, saline minerality and subtle waxy texture. Long, persistent finish with bright acidity and fine oak.


Food Pairing

Western: oysters, scallops, grilled/poached white fish, roast chicken, goat cheese. Asian: sashimi/sushi, tempura, miso-marinated fish, Vietnamese spring rolls, light Thai or Vietnamese seafood dishes.


Production Method

100% estate Sauvignon Blanc harvested early mornings (Aug 23–30); vinified in multiple small batches; matured ~25% in new oak; limited bottling from historic vineyards.
