Tasting Note
Concentrated, mineral-driven Sauvignon Blanc: citrus, white peach, grapefruit, lemongrass and yuzu with wet-stone/saline accents; satiny texture, bright acidity and a long chalky finish.

Western: oysters, lobster, grilled sea bass, roasted lemon chicken, creamy pasta, fresh goat cheese. Asian: sushi/sashimi, Vietnamese spring rolls, steamed ginger-scallion fish, mild Thai curries, Cantonese seafood.
Production Method
Whole-cluster pressing; fermentation in stainless steel followed by 7–8 months on lees in 33% new French oak; no malolactic fermentation; regular bâtonnage.
