Tasting Note

Chiseled blanc-de-noirs: orchard fruit (peach, apple, nectarine) with wild raspberry, cherry, chalky minerality, hay-smoke and fine yeasty mousse; long, precise mineral finish.

Western: roast poultry (Vallée d’Auge), seared scallops, smoked salmon, creamy poultry, foie gras (lightly seared). Asian: sashimi/sushi, tempura, Cantonese roast duck, dim sum, grilled prawns with citrus, Vietnamese spring rolls.


Production Method

Single‑parcel vinification in small vats; no malolactic fermentation; extended lees ageing (~10 years); low dosage (≈3 g/L); disgorged after long cellar ageing.
