Tasting Note

Concentrated black-fruit core of blackberry, black cherry and plum, layered with dark chocolate, licorice, spice and vanilla. Velvety talc-like tannins, pronounced oak-driven spice and a long, savory finish.


Food Pairing

Western: grilled ribeye, braised short ribs, roasted lamb shank, venison, aged cheddar. Asian: Korean BBQ (bulgogi/galbi), Chinese red-braised pork (hong shao rou), Sichuan-style beef, Malaysian beef rendang, umami mushroom hot pot.


Production Method

Multi-vineyard, multi-district blend; fermented traditionally and matured 20 months in 100% new American oak hogsheads (extended élevage).
