Tasting Note

Fine persistent mousse; citrus and pear with toasted hazelnut, sea-spray, saline minerality, autolytic brioche and light smoky/herbal notes. Bright acidity, creamy texture and a long saline finish.


Food Pairing

Western: oysters, raw shellfish, smoked salmon, roast chicken, paella, aged Manchego; Asian: sushi/sashimi, tempura, grilled prawns, light Thai curries, Korean BBQ (lean cuts).


Production Method

Hand-harvested; indigenous yeast fermentation (stainless steel), short élevage in tank, then bottled and aged ~100 months on lees; minimal or no dosage at disgorgement.

Raventós i Blanc family estate; Pepe Raventós (21st generation) farms Clos del Serral biodynamically on old vines in calcareous soils; tiny-production, terroir-driven cuvée.
