Tasting Note

Bright gold with fine mousse; aromas of dry grasses, wildflowers, fennel, lemon zest and brioche. Palate is bright, mineral and saline with malt‑biscuit, green apple and intense citrus acidity; long, precise finish.


Food Pairing

Western: oysters, shellfish, smoked salmon, roast chicken, mushroom risotto, paella. Asian: sushi/sashimi, tempura, grilled prawns, steamed dim sum, Korean BBQ (lean cuts).


Production Method

Biodynamic, old‑vine field blend; hand‑harvested and whole‑bunch pressed, fermented in steel and concrete, bottled for second fermentation and aged ~100 months on the lees before disgorgement.

Created by Pepe Raventós of the historic Raventós family (Raventós i Blanc). Small Clos del Serral plot of 1950s Xarel‑lo/Bastard Negre on calcareous soils, horse‑ploughed and biodynamically farmed.
