Bright, mineral-driven sparkling with baked apple, quince, citrus zest, saline and toasted brioche notes; creamy mousse, vibrant acidity and a long savory, saline finish.

Production Method

Hand-harvested; whole-bunch pressed; native-yeast fermentation in stainless steel and cement; bottled for extended in-bottle aging with ~100 months on lees before disgorgement.
