Tasting Note
Delicate white flowers, white peach and grapefruit with poached pear, brioche and almond. Creamy mousse, luxurious texture, vibrant acidity and a long, chalky, elegant finish.

Food Pairing
Western: sole meunière, king prawns with creamy polenta, Parmesan or Comté, smoked salmon. Asian: sushi/sashimi, tempura, steamed white fish, dim sum, light Thai or Vietnamese seafood dishes.

Production Method
Méthode traditionnelle (bottle fermentation); base wines partly fermented in oak, extended lees ageing; vintage cuvée with house dosage (solera used for dosage since 2012).
