Tasting Note
Bright citrus and bergamot lead, followed by white peach, pear and stone fruit; lees-derived brioche and flinty minerality. Vibrant acidity, saline tension, creamy mid-palate and a long, precise finish.

Food Pairing
Oysters, scallops, lobster, grilled sea bass, roast chicken with herbs, creamy risotto, goat cheese; Asian: sashimi/sushi, steamed white fish with ginger-soy, crab dim sum, Thai seafood salad.

Production Method
Hand-harvested, fermented in oak and large vessels with lees ageing; part-aged in large oak / large-format barrels to add creaminess and texture (12–18 months).
