Tasting Note
Elegant nose of yellow-fleshed fruit, citrus zest, beeswax and white flowers; brioche and pastry emerge with air. Round, supple palate with bright citrus, restrained oak, saline minerality and a long lemon-rind finish.
Food Pairing
Western: lobster, grilled sea bass, roast chicken with lemon butter, creamy shellfish pasta. Asian: sushi/sashimi, tempura prawns, Vietnamese spring rolls, lightly spiced Thai green curry.
Production Method
Blend of Sauvignon Blanc and Sémillon (71/29); fermented and aged 20–22 months in demi-muids and large Stockinger foudres with lees contact.
