Tasting Note

Concentrated black cherry, plum and mulberry with truffle, violet and cedar notes; silky, refined tannins, spice and earthy minerality, very long, elegant finish.


Food Pairing

Western: roast beef, lamb, venison, truffle risotto, mushroom dishes, aged hard cheeses. Asian: Peking duck, char siu, grilled wagyu, braised beef short ribs, mushroom hot pot.


Production Method

Hand-harvested Merlot; fermentation in temperature-controlled vats with extended maceration; aged ~18–20 months in new French oak.
