Tasting Note

Concentrated black cherry and plum with truffle, dark chocolate and forest-floor notes; silky, opulent palate, fine polished tannins, mineral lift and a long savory finish.

Western: roasted lamb, ribeye, beef Wellington, aged cheeses, truffle risotto. Asian: Peking duck, char siu, Korean galbi or soy-braised short ribs, mushroom/shiitake dishes.


Production Method

Hand-harvested; fermented in small vats with controlled temperatures and extended maceration; aged ~18–20 months in new French oak; bottled unfiltered.
