Food Pairing

Western: roast duck, roast lamb, mushroom risotto, beef bourguignon, aged Comté or Gruyère; Asian: Peking duck, char siu (Cantonese roast pork), miso‑glazed black cod, Korean BBQ beef bulgogi, soy‑braised mushrooms.

Production Method

Hand‑harvested Pinot Noir; partial whole‑cluster; fermentation on indigenous yeasts in open vats; aged 12–18 months in French oak (approx. 30–50% new).
