Tasting Note
Perfumed red-fruit core (cherry, raspberry) with rose and spice notes, silky texture, precise mineral backbone and a long, elegant finish. Youthful concentration with refinement and layered complexity.

Food Pairing
Roasted duck, lamb, mushroom risotto, beef bourguignon, aged Comté; Asian: Peking duck, hoisin-roast pork, miso-glazed salmon, soy-braised short rib, shiitake and tofu dishes.

Production Method
Hand-harvested fruit with careful sorting, cold-soak/controlled maceration, fermentation on indigenous yeasts and élevage in French oak (c.16–18 months; modest % new oak). Light filtration before bottling.
