Tasting Note
Garnet red with aromas of blackcurrant, red berries, cedar, pencil lead and spice. Fleshy attack, firm ripe tannins, toasted oak and saline minerality; long, precise finish.
Food Pairing
Western: roast or grilled beef, leg or rack of lamb, braised short ribs, game, aged hard cheeses. Asian: Peking duck, Korean BBQ (bulgogi/galbi), char siu, rich Sichuan beef, miso-braised dishes.
Production Method
Hand-harvested; fermented in stainless vats with gentle extraction; aged 20 months in oak (80% new). Bottled June 26, 2008.
