Tasting Note

Deep black-fruit core with violet florals, cedar and sweet spice. Silky, structured tannins, medium-high acidity and a long, graphite-tinged finish.


Food Pairing

Western: roast ribeye, lamb, braised short ribs, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi), Sichuan-style braised beef.


Production Method

Parcel selection; gentle fermentations with 15–24 day macerations; aged ~18 months in oak (c.80% new barrels).
