Tasting Note

Deep black-fruit core of cassis and blackberry with graphite, tobacco, cedar and truffle notes; powerful, ripe tannins, silk texture and concentrated, long spicy finish.


Food Pairing

Roast ribeye, lamb chops, venison with mushrooms; aged cheeses. Asian: Peking duck, char siu, Korean barbecue, miso-glazed black cod, rich Cantonese beef dishes.


Production Method

Hand-harvested, fermentation in stainless steel with controlled maceration; aged 18 months in French oak (80% new, 20% one-year-old).
