Tasting Note
Concentrated blackcurrant and blackberry with graphite, cedar, violet and tobacco notes. Powerful, layered palate with firm, powdery tannins, dark chocolate and baking spice; very long, mineral-driven finish.

Western: roast lamb, ribeye steak, beef bourguignon, aged comté or cheddar. Asian: Korean barbecue, char siu (Cantonese roast pork), Peking duck, rich Sichuan beef or grilled wagyu.
Production Method
Hand-harvested; temperature-controlled stainless-steel fermentation with extended maceration; malolactic fermentation followed by ~18 months in French oak (≈80% new).
