Tasting Note
Aromas of cherries, red berries and plums with raw cocoa and warm spice. Medium–full-bodied, layered and fleshy with sweet, fine tannins and a mineral, slightly smoky finish.
Food Pairing
Western: roast lamb, côte de boeuf, mushroom risotto, beef bourguignon, aged comté or gouda. Asian: Peking duck, miso-glazed salmon, char siu, Korean BBQ short ribs, shiitake and soy mushroom dishes.
Production Method
Biodynamic viticulture; traditional, low-intervention vinification in oak vats with élevage in mainly used barrels and a small proportion of new oak, hand-harvested fruit and long cellaring potential.
