Tasting Note
Fragrant violets and wild berry fruit with black plum, lavender and a saline minerality. Silky, polished tannins with spice, graphite and a long, mineral finish (ageable).

Food Pairing
Western: roast beef, lamb, venison, mushroom risotto. Asian: Peking duck, char siu (BBQ pork), Korean BBQ short ribs, braised beef with Sichuan pepper.

Production Method
Hand-harvested, fermented in stainless and concrete; aged ~17 months in French oak (approx. 70% new). Bottled after élevage; limited production.
