Tasting Note
Fresh, mineral-driven Pauillac: blackcurrant and blackberry with raspberry, floral violet/rose notes, graphite, cedar and spice. Medium-bodied, refined plush tannins, bright acidity and a long, mineral-laced finish.

Food Pairing
Roast ribeye, lamb, beef bourguignon, aged cheeses; Asian pairings: Peking duck, Korean BBQ (beef), char siu, Sichuan pepper beef, miso-glazed aubergine.

Production Method
Biodynamic viticulture; hand-harvested and sorted, gravity-fed into concrete vats; fermentations in concrete/amphora/wood; ~16 months ageing (≈50% new oak, 35% amphora, 15% one-year oak).
