Tasting Note

Powerful yet refined: ripe cherry, plum and blackberries with dark chocolate, mint, eucalyptus and a hint of incense. Silky texture, firm tannins and a long, savory finish.


Food Pairing

Western: roasted or braised lamb, slow-cooked beef, ragu, aged pecorino or Parmigiano-Reggiano. Asian: Korean barbecue, spicy Sichuan beef, Peking duck, teriyaki or miso-glazed dishes.


Production Method

Manual harvest; ferment 20–25 days at 28–30°C; élevage 18–24 months in new oak barriques; bottle aging prior to release.
