Tasting Note

Concentrated Napa Cabernet with crème de cassis, blackberry and dark cherry layered with mocha, licorice, violet and toasted cedar. Full-bodied, ripe fine-grained tannins, bright acidity and a long mocha-and-mineral finish.

Food Pairing

Grilled ribeye, braised short ribs, lamb chops, beef Wellington; Asian pairings: Korean BBQ (bulgogi), Chinese char siu, Szechuan beef, miso-glazed dishes and teriyaki-style beef.

Production Method

Hand-harvested fruit fermented on skins with extended maceration (~30–38 days), then aged ~18–20 months in French oak (about 54% new) before bottling. Small-lot production, minimal fining for texture.
